With college students on a tight budget, and their need for quick and easy snacks, all you need to do is save a beer from the night before (or even snag one from a friend), and buy some cheese and tortilla chips.
Anyone with an oven can make this easy recipe, so take notes:
? 1 bottle (12 oz) beer (not dark)
? 1 cup grated sharp cheddar cheese
? 1 cup grated gorgon-zola cheese
? 1 cup grated monterey jack cheese
? 1 cup grated colby cheese
? 2 tablespoons all-purpose flour
? 1 small onion, finely minced
? 1 tablespoon unsalted butter
? 1/2 cup tomatoes, finely chopped
? tortilla chips for dipping
Toss the cheese and flour together in a bowl, and set aside. In a saucepan, cook the onion with butter over low heat, and stir until the mixture is soft and clear. Add the beer and tomatoes, and simmer the mixture for five minutes. Add the cheese mixture to saucepan by 1/2 cupfuls and stir after each addition until cheese is melted. Serve over chips and enjoy!
