I don’t have a lot in common with my parents, and one of the most noticeable differences is in our food preferences. The more ingredients something has, the more likely it is that I will like it. I prefer dishes light on meat and heavy on flavor. My parents don’t think a meal is really a meal without a slab of animal flesh the size of my face.
When I’m at home for the summer, a constant struggle ensues between my father and me because we split the cooking duties while my mom works late. I always try my best to get out of it, but sometimes I’m unsuccessful. Naturally, when I can’t get out of my turn to cook, I want to make something I’ll like.
I get a lot of satisfaction when I make something that my parents love. I do enjoy profuse praise, but I also enjoy making something that my dad absolutely hates. Ever since I was little, I always have loved watching my dad make his “sour food face.”
He hates foods with that distinctive tangy and sour taste like sauerkraut, and this recipe is guaranteed to earn that face.
For everyone else, Ukrainian soup is flavorful, intense and surprisingly healthy.
Ukrainian Soup
Ingredients

• 1 onion, thinly sliced
• 1 Granny Smith
apple peeled, cored
and sliced
• 3 cups shredded red
cabbage
• 4 cups beef stock
• 1/2 cup cider
vinegar
• 1/4 cup packed
brown sugar
• 1/2 tsp. salt
• 1/4 tsp. ground black
pepper
• 1/4 tsp. celery salt
• 1/4 cup apple butter
Instructions
In a large saucepan, sauté the apple and onion in the butter until tender. Stir in the cabbage and sauté for five more minutes. Pour in stock and vinegar; bring to a boil. Reduce heat and stir in sugar, salt, pepper and celery seed. Simmer, uncovered, for an hour. Stir in apple butter. Source: allrecipes.com
