Residents of Baldwin City may have to wait a little longer than planned to get the barbecue they have been anticipating.
Hickory Creek BBQ owner Ric Gere said he was not sure his business would be opening on Sept. 15 as he had planned.
“I’ll be there on the fifteenth,” he said. “But Thursday (Sept. 14) we’re getting our health inspection, and I am getting some stuff in on that day, and we may not be able to open the very next day.”
The establishment will open for certain on Sept. 22, but will be open only on the weekends for two or three weeks, Gere said.
Hickory Creek BBQ will be closed the first week of October.
“I had prior plans for that week,” Gere said. “I’m taking a team to the American Royal Barbeque competition.”
The tentative hours of business will be 5 p.m. to 9 p.m. on Fridays and 11 a.m. to 9 p.m. on Saturdays, he said.
