Baldwin City’s restaurant selection just got a little bit sweeter.
Bulldog’s Bakery opened its doors two weeks ago, but owner Brian Grissell said business has been slower than he expected.
“A bakery is one thing that everybody said they wanted to see in this town,” he said. “So I kind of expected a little more.”
The lack of customers could prove to be even more of an issue in a couple of weeks, when a second bakery is scheduled to open.
“I didn’t know about the other bakery when I first started this idea,” Sunrise Bakery owner Connie Hadl said.
Hadl said she isn’t worried about competition from Bulldog’s Bakery, since the two will focus on different menu items.
Sunrise Bakery will offer plenty of sweet treats: donuts, cookies, long johns, twists and birthday cakes. Bulldog’s Bakery offers many of these same items, but will also be serving lunch.
“We will have sandwiches, soup, bread bowls, salads, stuff like that,” Grissell said. “The lunch will probably start next week.”
In order to get her business off the ground, Hadl said she plans to offer discounts to Baker University students, and she will perhaps donate food for university-sponsored events.
Grissell said he has his own plans for getting Baker students to become customers of Bulldog’s Bakery.
“The upstairs is going to be a student lounge,” he said. “Anyone can come study here instead of going to the library. We want to make Baker a part of the community and the community a part of Baker.”
He said the project should be completed by the end of summer, so students can take advantage of it next year. Right now the project is on hold due to monetary issues.
Bulldog’s Bakery already has at least one fan at Baldwin City Hall, but administrative assistant Amara Davis said she’ll try Sunrise Bakery once it opens.
“Bulldog’s is delicious,” she said. “Our city clerk went there and brought back some items, and they were all really good.”
